Jase Andrews’ Easter Sunday Roast

Australia’s favourite outdoor adventurer, All 4 Adventure’s Jase Andrews, is an expert when it comes to camping and cooking in the great outdoors. Having ventured across the country by dirt road many times, he’s got a bunch of tips and tricks for simple but delicious campfire cooking. His new cookbook, “About That Much…” features a collection of recipes, both simple and a little bit fancy, for your next weekend away.

A four-day long weekend is the perfect excuse to pack your bags, hit the road and set up camp somewhere along the coast. But just because you’re away from home, it doesn’t mean you need to miss out on a traditional Easter Sunday feast. So make sure you break out the camp oven this coming long weekend and check out Jase Andrew’s recipe for a wholesome Sunday roast!

Beef Rib Roast

Ingredients:

  • 5kg beef rib roast
  • 3 medium onions
  • 4 medium potatoes
  • 1 bunch fresh baby carrots
  • 1 small bunch fresh rosemary
  • 1 knob garlic
  • Salt
  • Pepper
  • Olive oil

Method:

Make incisions into the roast to insert garlic cloves and rosemary, this helps to infuse the flavours into the meat. Place onto a trivet into pre-heated camp oven. Large roasts will take at least 2 hours, small at least 1 hour. Add veggies at the half way mark during cooking.
