A four-day long weekend is the perfect excuse to pack your bags, hit the road and set up camp somewhere along the coast. But just because you’re away from home, it doesn’t mean you need to miss out on a traditional Easter Sunday feast. So make sure you break out the camp oven this coming long weekend and check out Jase Andrew’s recipe for a wholesome Sunday roast!
Beef Rib Roast
- 5kg beef rib roast
- 3 medium onions
- 4 medium potatoes
- 1 bunch fresh baby carrots
- 1 small bunch fresh rosemary
- 1 knob garlic
- Olive oil
Make incisions into the roast to insert garlic cloves and rosemary, this helps to infuse the flavours into the meat. Place onto a trivet into pre-heated camp oven. Large roasts will take at least 2 hours, small at least 1 hour. Add veggies at the half way mark during cooking.
So there you have it – a delicious Sunday roast for your Easter long weekend. And if your sweet tooth needs satisfying, whip up an apple crumble, cinnamon tea cake, lemon lime pie or some golden syrup cookie cakes too. Get a little adventurous and try something new the next time you go camping.
